It’s not easy being green, but it’s much easier than it used to be. I am a vegetarian for the simple reason that being one is less damaging to the environment. My husband is vegan. Neither of us is overly crazy about vegetables.
I was a vegetarian as a teenager, and it’s amazing I didn’t starve to death. I lived on pasta and vegetable egg rolls. There just wasn’t much available at the time. I hadn’t discovered tofu, and even if I had, I doubt I’d have been able to cook it properly.
I know how to cook tofu now, but I have tons of other options available to me also. Boca makes meatless burgers and life is good. Not to mention all the wonderful stuff Morningstar Farms makes.
Fast food restaurants still have very little to offer to vegetarians, but I have no problem finding enjoyable meals at the grocery store. Kroger carries just about everything I buy now. I’ll post some of my recipes here soon. I’ve been somewhat creative with some Worthington food items. I make great fake pork chops and fried chicken!
Anyway, being a vegetarian who prefers her vegetables to look like a hamburger has never been easier.
